MANAGER SPECIAL & COUPON RECIPES

HAM & CHEESE SCALLOPED POTATOES
(Sherry's recipe)

6 Potatoes, peeled & sliced thin - FREE
(free because the price rang up wrong.
Kroger's policy says you receive the item
for free when it rings up wrong)
1 jar Ragu double cheddar sauce- $1.00
(used coupon & sale)
1 cup onion, finely diced- .20 cents
1/4 cup butter- .10 cents
4 cups milk- .45 cents
3 tablespoons flour- .05 cents
salt & pepper- FREE
8 ounce bag of diced ham- .99 cents
(manager special)

Total cost- $2.77

Directions:

Grease a very large casserole dish with butter.


Peel and slice 6 medium sized potatoes.


In a large sauce pan melt butter over medium heat.
Add onions and stir til translucent. Stir
in cheese sauce.

Stir in milk.

Whisk in 3 Tablespoons flour and cook for
a couple minutes. Turn off burner.

Spoon a layer of cheese sauce over bottom
of casserole dish.

Add potato slices in a single layer.
Salt & pepper. Sprinkle some diced ham over top.
Spoon more cheese sauce to cover potatoes.

Repeat layers.

Cover casserole dish with foiland bake at 350 degrees for
40 minutes. Remove foil and bake another 20 minutes.

You will usually find dented cans marked down
in the manager special area of your store.
I have two rules to follow when buying dented cans.

1. Make sure you are able to get a can opener
around one end or the other of the can to open it.

2. Press a finger into the top or bottom of
the can. If it dents easily then more than likely
the contents are no longer good. It's just like
canning. You hear the seal of the lid pop. But if
the lids stays flexible the contents will go bad if
stored on a shelf.

Easy Homemade Chili


Ingredients

* 1 pound ground beef
I use ground turkey since it is cheaper than beef.
* 1 onion, chopped
* 1 (14.5 ounce) can stewed tomatoes
I usually find dented canned tomatoes marked down to .49 cents
* 1 (15 ounce) can tomato sauce
* 1 (15 ounce) can kidney beans
* 1 1/2 cups water
* 1 pinch chili powder
* 1 pinch garlic powder
* salt and pepper to taste

Directions

1. In a large saucepan over medium heat, combine the beef and onion and saute until meat is browned and onion is tender. Add the stewed tomatoes with juice, tomato sauce, beans and water.
2. Season with the chili powder, garlic powder, salt and ground black pepper to taste. Bring to a boil, reduce heat to low, cover and let simmer for 15 minutes.

Crockpot Chili



2 cans of mild chili beans $1.10
(three are shown but I'll only be using 1)

1 can diced tomatoes with juice .49 cents

1 small onion diced .10 cents

2 cans tomato soup FREE

Water

Directions-

Fry turkey in skillet til done.
In crock pot add the turkey and all
the above ingredients. Add enough
water to your liking. Cook for 2-3 hours
on low.


Homemade Cornbread
(from recipe on aunt jemima corn meal mix)
(makes 9-10 servings)

2 cups cornmeal mix .18 cents

1.5 cups milk .21 cents

1 egg, beaten .14 cents

2 Tablespoon vegetable shortening, melted FREE

2 Tablespoons Splenda .05 cents

Grease 9" x9" casserole dish.
Combine dry ingredients. Add milk & egg, mix until blended.
Add melted shortening; mix well. Pour into warmed
casserole dish. Bake 20-25 minutes at 425 degrees.





Total cost of Chili and Cornbread $1.72
I'm going to guess and say the chili will make 6 servings
@ .28 cents a serving
